Tkemali is Georgian name for several endemic species of plum that grow throughout Georgia. Domesticated trees differ very little from their wildgrowing relatives. From the times immemorial Georgian cooks are in love with this viscous sauce; blend of multitude verdure and seasonings. Three main types of plum sauce include green, yellow and red Tkemali. Green Tkemali sauce is prepared from unripe fruit in spring whilst the yellow and red ones are cooked from ripe plums in autumn.
Appetizing, delicious and nutritious, Georgia's Natural Tkemali Sauce goes well with roast meats, steaks, chops and burgers. It is a good dressing for chicken, roast beef, lamb and fish dishes as well as for fried potatoes and salads.
